Menu Plan Dinner: Taco Salad
Ingredients:
- Tortilla Chips
- Chopped Romaine Lettuce
- Bolthouse Cilantro Avocado Dressing
- Ground Beef (2lbs)
- Taco Seasoning
- Cherry Tomatoes
- Corn on The Cob
- Black Olives
- Shredded Cheese
Directions:
- Brown ground beef over medium heat in a skillet.
- While beef is browning- chop and wash the romaine lettuce.
- Wash the corn on the cob and cut it from the cob.
- Wash and cut the cherry tomatoes in quarters.
- After the beef is browned, add taco seasoning according to the directions on the packet.
- Sauté the corn in a frying pan with butter and salt.
- In a large salad bowl, toss the lettuce with the Cilantro Avocado dressing.
- To Serve: Layer in a pasta dish – a layer of tortilla chips slightly crunched, a layer of the tossed lettuce, taco meat, shredded cheese, corn, tomatoes, and top with black olives.
Menu Plan Dinner: Sausage & Tortellini
Ingredients:
- Family Size Cheese Tortellini (if your family is large you may need two)
- Ground Italian Sausage
- Vodka Sauce
- Mushrooms (optional)
Directions:
- Set a large pot of water to boil with salt and olive oil (olive oil will help keep water from boiling over.
- Brown the ground Italian sausage in large skillet.
- Wash mushrooms if using.
- Once the sausage is browned, remove from pan if adding mushroom.
- Fry mushrooms in same pan for five minutes.
- Add vodka sauce and cooked ground sausage.
- Set sauce to simmer on low heat.
- Once the water is boiling add Tortellini and cook according to package instructions.
- Drain tortellini.
- Add pasta and sauce to a large pasta dish, stir, and serve.
- Top with shredded cheese if desired.
Menu Plan Dinner: Cucumber & Avocado Bowl
Ingredients:
- Rice
- Chicken (about 4 breasts)
- Diced Avocado (2)
- Sliced Cucumber
- Half Red Onion
- Chopped Green Onions
- Goat Cheese
- Bolthouse Cilantro Avocado Dressing
Directions:
- Cook rice according to package instructions (most rice is best with two parts water to one part rice, add butter, add salt, bring to a boil, cover, simmer for twenty minutes, rest for ten minutes. I have had rice where the package instructions did not yield the best rice and the previously described directions did. It is best to get to know your preferred brand of rice and stick with it.)
- Bring a pan with two tablespoons of olive oil up to medium heat before adding chicken breasts.
- Season chicken breasts with salt and pepper.
- Cook on each side about 6-7 minutes until the internal temperature is 165 degrees.
- Dice avocados.
- Slice washed cucumber.
- Dice a half of red onion.
- Chop the green onions.
- Dice the chicken when it is finished cooking.
- Assemble in bowls: a layer of rice, a layer of chicken, top with avocados, cucumber, green onion, and red onion.
- Drizzle over the bowl Cilantro Avocado Dressing.
- Top with goat cheese.
